If i am asked the question which is the most best food that i cook i can say Vegetable Briyani as most of my friends ask its recipe after eating it . This is my method along with some from my Mother . If i see Pudina (Mint Leaves) in my fridge i immediately plan for Briyani . And mostly i find it easy to cook in the weekdays and pack.
|Briyani Rice||2 cups|
|Beans||A cupful of cut beans|
|Green chilly||3 to 4 tsp|
|Mint leaves||A handful|
|Red chilly powder||½ tsp|
|Briyani masala powder||2 tsp|
|Toasted bread slices||3 slices|
|Salt and oil||As required|
Method: Wash rice twice and soak it in enough water . Add the coconut milk to this and leave it aside for 30 minutes. Meanwhile chop carrots, potatoes beans, onions, peel garlic and grind it with ginger , green chilly and saunf with little water.
Toast bread and cut them into squares. Heat oil in a pressure cooker ,add 2 tsp ghee to it . When this gets heated add cinnamon, cardamom, clove and bay leaf. Then add onion and fry till brown.Now add mint leaves and fry till it gets soggy .
Add vegetables, grind paste , salt , red chilly powder, Briyani masala powder and mix them well.
Drain the water from the rice and measure it . Add some more water to it so that for 2 cups of rice you add 3 cups of water . Add rice into the cooker and then the water.
Mix slowly so that the rice doesn’t get damaged.Cover it and when cook for 1 whistle.After the steam settles open the cooker and see if the Briyani is cooked well .Add Toasted bread slices to this and serve with Onion- cucumber raitha .
1. You can add peas, cauliflower. Beetroot if you want.
2. Soya chunks can be added.
3. If using raw rice. Wash the rice and drain the water . Just leave the rice in a vessel for half an hour and then cook .
