AApam(ஆப்பம் )

Aapam is a much relished dish and even children like it .
Ingredients:
Raw Rice     1 cup
Boiled Rice  1 cup
Urad Dal       1/ 4 cup
Methi seeds 1 tsp
Salt                1tbls

Method:
Soak the rice and dal separately for 6 hours.

Grind rice first and then the dal to a smooth consistency .

Add salt and allow it to ferment for 8 hours . You can now use it to make AApam. Aapam can be easily made in the non-stick aapam pan than the kadai . Apply 1 tsp oil in the aapam pan and wipe it thoroughly. Heat the pan and now add 1 and ½ ladle Aapa dough and swirl the pan in circular way .

Close it and cook slowly . After few minute prick a tooth pick in the middle to check whether the aapam is cooked , for the centre part takes sometime to cook . When the toothpick comes clean it shows the Aapam is ready . Aapam can be served with Onion chutney and Coconut milk.

Coconut milk:
Coconut 1 cup
Warm water 2 cups
Jaggery 4 cubes

Method:

Grate coconut . Add warm water to it and let it cool for a while. Then strain the water and grind the coconut with little water . You will get a mixture of coconut and milk. To separate it squeeze in a clean white cloth . Repeat this process thrice using the warm water . Finally you will get a sizeable quantity of coconut milk. Now add jaggery to ½ cup of water . After it dissolves heat it . Strain the jaggery water and remove the impurities . Again cook it till you get a thick consistency. Add this to the coconut milk and if needed add cardamom powder . Serve this with aapam.
