Saturdays are the days when we want to cook a full meal. Vatha Kuzhambu which can be used the next day also, is one of my favourite food .Yellow pumpkin, Brinjal, Drumstick, Lady’s finger can be used for making this. The yellow pumpkin is my best choice as i like the sweet taste in the Hot kuzhambu .
Yellow Pumpkin- 1 half
Small onions -7
Garlic – 5 flakes
Tamarind – small lemon size
Sambhar powder -1 and ½ tsp
Turmeric powder – 1 tsp
Curry leaves – few
Jaggery – 1tsp
Gingelly oil – 2 tsp
Mustard seeds- 1 tsp
Methi seeds – 1 tsp
Method: Cut the yellow pumpkin into small pieces, with the skin. Peel onion and garlic. Soak tamarind in water and take the juice . Heat oil in a thick bottom vessel. Add mustard seeds, methi seeds.
Add onion and garlic and Yellow pumpkin. Saute well.
Then add sambhar powder ,turmeric powder and again mix well.
Add Tamarind water , curry leaves and close with a lid . Cook it in a slow flame.
Gradually the Kuzhambu will get thickened. Finally add jaggery and salt . Now cook in high flame for 10 minutes and the Vatha Kuzhambu is ready. You can use it for at least 4 days if stored in the fridge. The best combination for Vatha Kuzhambu is Paruppu Thuvaiyal and Potato curry .
