Eat in moderation Idly Milagai Podi, is what all of us hear when we were young and again we are repeating this to our children . Sometimes i hide the podi or do not grind for few weeks so that children can have sambaar or Chutney for Idly and dosai. Such is the temptation. The Idly milagai podi with gingelly oil applied on Idlis when carried for travel is Devamirtham. Each household has a different recipe and almost all are good . My recipe is also borrowed from here and there , to get the best .
Red Chilli –1 cup
Urad dal(Black or white )- 3/4 cup
Channa Dal –1/2 cup
Hing – 1tsp
Black sesame seeds-1 tsp
Coconut oil – 1 ladle
Method: Dry roast the sesame seeds in a kadai. When it splutters remove it and keep aside. Add little oil in the same kadai and add the dals first and roast it . When they turn brown remove and keep aside and then roast the Red chilly . Finally grind the ingredients when cool with salt to a smooth texture.My Grand mother heats a ladle of oil and pours on this podi . It gives a good taste . i used coconut oil and heated and poured on the podi. Mix well . Now its is ready for use.
