Wheat Macaroni Vegetable Soup is a wholesome food and if we make it for dinner it is enough and no need for making a main meal. The stock consists of Four vegetables . The soup has wheat macaroni and some more vegetables thus giving a filling feeling and the next day we get up with freshness. This soup is Ideal for those who want to lose weight . This recipe was given by Mrs Revathi Shanmugam and i have made minor variations .Now to the soup
Ingredients for the Soup.
Preparation of stock:
Peel the skin of all the vegetables and cut them . Pressure cook for 3 whistles or steam them in a closed container till done . Strain the water from it which can be used to grind the vegetables. Now blend the cooked vegetables in a blender . You will get a liquid with little pulp , strain this . With this and any remaining water when used for cooking the vegetables , heat with sugar and salt (aji no moto is optional) and allow to boil . There will be less residue when straining as all the vegetables i have used have high water content . The boiled water is Vegetable stock. Add Black pepper powder to this.
1.Making of Macaroni:
Now cook macaroni in boiled water and drain the water after it is cooked . You can add any macaroni , wheat is more good. Rinse the cooked macaroni in running water and keep it aside .
Soup preparation :
2.Now boil the vegetables (Beans, carrot , Snow peas , cabbage , Baby corn) just for one whistle. Vegetables are our choice and we can use what we have in hand .Add these vegetables to the vegetable stock.
