Vegetarian Bee Hoon .

Bee hoon is the most common food in Singapore. Almost all parties,functions have this food.  Recently one of my friend shared this recipe and from then i have been doing this often. A lot of vegetables can be incorporated in this and can be served for Lunch or dinner.

Ingredients
Rice Vermicelli – ½ packet
Carrot, Beans, Cabbage – 2 cups
Bean Sprouts – 1 cup
Fried Tau – 1 packet or 8 pieces
Choy Sum -1 bunch
Onion -2
Garlic – 3 flakes
Lemon red Chilly Sauce – 1 ½ tsp
Small lime – 4
Salt

Method:
1. Soak the vermicelli in water for at at least 4 hours.

2. Usually one half of a packet is enough for a family of four. After 4 hours cut the vermicelli with a scissors . Drain the water completely .
3. Cut all vegetables .
4. In a big pan or wok add oil. Saute Onion and garlic.

5. Then add the vegetables and Choy Sum . Saute well. Cover it for few minutes . Then open it and add the fried tau which is cut into pieces .

6. Add the Lemon chilly sauce. This is very hot so add it according to your taste . Add salt and mix well. i added a pinch of turmeric powder now.

7. Then add the rice vermicelli and toss well. Finally spread sprouts and cabbage on the rice vermicelli .

Cover the vessel for 10 minutes and cook in a slow flame . Then open the cover and toss well . We can use a tong and a ladle to mix well. Finally add the lime juice and mix well  Spicy Veg Beehoon is ready .
