When guests come, along with variety of dishes the grinding of vadai dough is also difficult . The batter may not come with the desired consistency A replacement of the vadai is Vegetable bajji which is rich in vegetables and tasty too. This goes well with rice than eating as a snack. Mrs. Revathy Shanmugam demonstrated this in a cookery show and from then it is in our family menu.
Carrots, beans, cauliflower, spring onion, cabbage -2 cups
Gram flour -2 cups
Maida/Plain flour -2 cups
Corn flour -2 cups
Red Chilli Powder -1 tsp
Ginger Garlic paste -2 tsp
Oil to deep fry
Along with the vegetables mentioned above choose any vegetable of your choice and cut into small pieces. Grind Ginger garlic into a fine paste. Mix all the flour, hing, chilli powder, salt .
Then add water and make it to thick consistency.
To this add the vegetables .
Green chilli can be added instead of red chilli powder .
