Ridge Gourd Thuvaiyal.


Ridge Gourd  is mainly used by me for making Thuvaiyal. In Singapore we get very  long Ridge gourd  and seeing  the richness we are tempted to buy it . Ridge Gourd Thuvaiyal ca be added to rice or as as side dsih for Idly, Dosai.


Ridge Gourd -1

Red Chilli -2

Urad dal -1 tsp

Channa  dal -1 tsp

Hing – ½ tsp

Coconut – 2tsp

Tamarind – a small pebble size



Wash the Ridge Gourd. Cut both ends . Trim off the ridges only and not the skin. Cut the vegetable into small piece. Heat oil in  a kadai  and fry the dals  and chilli well and keep aside.


Next fry the Ridge gourd in slow flame . The water will ooze out and the Ridge gourd will be cooked well in this .


When cooked and cool grind Ridge gourd, dals, chilli, tamarind, salt and coconut together . If needed  add little water . Serve with hot rice and ghee.
