Lemon Idiappam.


Idiappam or string hoppers is  rice flour  steam cooked . It can served plain or any other flavours can be added. Idiappam Kurma, Idaippam stew. Lemon Idiappam, Tamarind , Pepper, Coconut , Sweet , Vegetable are some flavours . Making  Idiappam  was considered a laborious task  but  my grandmother used to make five flavours  for all of us with much ease  . But when we prepare in small quantities it is not that much difficult . The traditional way is to soak rice , dry and then grind it into fine flour in the rice mill. But i prepare from the ready made flour  and that too only one flavour at a time. My children like Idly Milagai Podi mixed Idiappam .  And Idiappam is worth the effort we take , as  the taste and the softness will wave away all the work  put in this .



Idiappam Flour – 1 packet

Lemon -3

Green chilli -3

Red Chilli -2

Mustard seeds -1 tsp

Urad Dal -1 tsp

Channa Dal – 1tsp

Groundnuts – 2tsp

Turmeric Powder -1 tsp

Curry Leaves


Gingelly Oil.


  1. Boil 2 cups of water .
  2. Mix little salt with Idiappam  Flour and keep this in a big basin .
  3. Add  the hot water into this little by little. The rear side of a ladle will help in mixing . Slowly make it into a dough .Apply little oil in your hands and mix the dough finally so that the stickiness will go.

DSC082274.If water is piping hot the dough too will be soft . If the dough becomes   watery add little more flour. It is better to divide the packet and do in two batches .

5.Put a small amount of  this dough in Murukku Achu with the minute holes mould and  swirl gently in rounds and make Idiappams.

DSC082286.When all the Plates are filled , steam it in a  Idly pot for 5 to 8 minutes. Meanwhile squeeze lemon juice and add turmeric powder, salt to it . Temper mustard seeds, channa Dal, urad dal, ground nuts, Chilli, Hing and add this to the lemon Juice .When the Idiappams  are cooked  spread it in big plate .

DSC082297.Add the prepared  seasoning to it . Even if you are in a hurry to make the next batch at least just mix roughly this as it will be easier when you mix later .Apply little oil in your hands and mix the Idiappam  gently ,the  unmixed white parts should be mixed well .

DSC082308.Taste for salt . Add little Gingelly  oil so that Idiappam will remain fresh and soft for longer time .
