Yellow Pumpkin Curry.

Yellow pumpkin is always a  delight and we can make a number of dishes with it . Today i made a flat main gravy so Yellow pumpkin was my choice for making the side dish as it will be spicy.

Ingredients:

Yellow Pumpkin -1 rind

Onion -1

Tomato – 1

Red Chilli powder -1 tsp

Jeera /cumin powder -1 tsp

Mustard seeds -1 tsp

Cumin seeds -1 tsp

Salt

Oil

Method:

Cut yellow pumpkin into small pieces with skin .

Cut onion and tomato. In a kadai add oil .

When it gets heated add mustard seeds and Jeera .

When they splutter  add onion and sauté well followed by tomato.

Add red chilli powder , Jeera powder,salt and mix well.

We can now add the yellow pumpkin and coat it well with the  masala.

Add water and cover.

Within few minutes the yellow pumpkin will be cooked and the water too evaporated .

Open  the  lid and let it become dry . Can be garnished with curry leaves and coriander leaves .

Goes well with rice or roti .
