Methi Paratha.

i usually make this paratha by simply adding chopped leaves , and spices to wheat flour and rolling them into Chapattis. But i found this recipe in http://foodwithapinchoflove.wordpress.com which i found more appealing and so wanted to try .And i added little ragi flour to improve the nutrition content.  Now for the recipe.

Ingredients:

Wheat Flour – 2 cups

Ragi flour  –  1 /2 cup

Methi leaves – 1 cup

Gram Flour -2 tsp

Red chilli powder – 1 tsp

Coriander powder -1 tsp

Cumin Powder -1 tsp

Green chilli -2

Ginger – a small piece

Oil

Salt .

Method:

Cut methi leaves, ginger, garlic into small pieces . In a pan add little oil and fry green chilli and ginger .

Then add the methi leaves . The leaves should get cooked in its own moisture. So better be in slow flame and cook covered. After some time add salt . The leaves will drip extra water . Let this evaporate and then add the spices and Gram flour . Finally salt . This should be actually dry as in the original recipe. But i had added little water , so it became little soggy . But that also tasted nice.

Now knead the Atta with little salt and make in to a soft dough. Keep it aside for twenty minutes .

After 20 minutes  make small circles and roll them into small circles . In the centre ,spoon little of the methi mixture . Fold the ends and roll into thin chapattis . Cook in ghee or oil in a tava on both sides . Serve with raitha .
