Pav Bhaji (With Home made Buns ).

DSC09568One of the most irresistible food is street food and particularly the North Indian variety which first appeared in the streets, were a treat and always tempting to us. Compared to its taste the one we eat in hotels do not even come near it . The unique aroma we had in Shanti Vihar hotel with the chef cooking and the quick movements they showed while making them  is always a memorable one. Cutlets, Bhel Puri, Pav bhaji and Pani puri are some of my favourite ones . Pav bhaji was one of my earliest attempt ,immediately after finishing my college. Later i forgot it but recently reading the recipe in Preeti’s kitchen i got the idea to revamp it and tried the Buns and masala. The home made buns with this spicy vegetable curry with fresh onion, cilantro and lemon wedges are a big treat and will suit anyone’s palette. Luckily had Pav bhaji masala with me and so i ended with a good dinner. The only problem was the slightly darkened buns but they were still soft and next time i have to reduce my oven temperatures.

Now for the recipe.

Ingredients for the Buns:
All purpose flour – 2 cups
Butter -1 1/2 tbs
Sugar – 1 tbsp
Active Dry yeast – 1 1/2 tsp
Lukewarm water – 2 tbs
Milk – 3/4 cup
Salt – 1/4 tsp

Method:

Mix water. yeast and sugar and keep it for 5 to 6 minutes.

Sieve APF and add butter to it . In the middle make a well and add the yeast mixture . Sprinkle milk and salt and knead well.

Finally add oil on the outer side . Store this in a bigger container and cling wrap it . Cover it for atleast 2 to 3 hours.

After the raising time is over divide it into 6 equal parts . Make small balls .

Place it in a oven rack which is preheated at 225 degree. After 5 minutes bake it for 10 to 12 minutes and brush will oil or butter for the glossy look.

For the Bhaji :

Ingredients:
Potato, carrot, Beans – 2 cups
Ginger garlic paste – 2 tsp
Onion -2
Tomato -1
Pavbhaji masala powder – 2 tsp
Salt
Coriander leaves – 1 small cup
Lemon -1

Method:
Cut the vegetables into small pieces Pressure cook till done . Ina kadai add oil and fry onion and then tomato. Add the ginger garlic paste . Saute well. Add the boiled vegetables and mash well. add Pavbhaji masala powder, salt and cover it . Cook for 10 minutes .

Serve the pav (Buns ) with this masala and cut onion , lemon wedges and coriander leaves.
