The most simple yet tasty food which i wanted to record here as it will be a different option than our usual recipe . Usually a simple lemon rice with groundnuts or cashew as an extra ornament will be a feast to eyes and mouth. But once i tasted lemon rice with carrots in my friend’s house . Later i started doing it by just cooking the diced carrots in a microwave. And whenever i make mixed rice i plan to make vegetables curry as we usually tend to eat a lot when we have mixed rice . And those who want to lose weight have to avoid mixed rice . but when there is no other go we can substitute a portion of the rice with vegetables .Now for the method.
Cooked Rice -1 cup
Frozen mixed vegetables – 1 cup
Lemon juice – from 2 lemons
Green chilli -2
Mustard seeds -1 tsp
Omam /Ajwain – ½ tsp
Channa Dal -1 tsp
Ground nuts – 1 tsp
Gingelly oil – 2 tsp
Turmeric powder – 1 tsp
Salt – as required .
Cook rice till soft and ensure they are separate .
Cool them in a plate with a splurge of oil so that they will not stick.
Meanwhile add oil in a kadai .
Add mustard seeds, Channa Dal, Ajwain , Grounduts and fry well.
Add the green chilli and frozen vegetables till the moisture gets evaporated .
Squeeze lemon juice on the rice add turmeric powder in the centre of the rice , add the fried items on it so that the hot oil will take away the raw smell of the Turmeric powder.
Mix the rice well .
Garnish with curry leaves .
