Vegetable cutlets. ( Makes Around 70 )

Yes i want it to term it in plural as i have to do around 60 cutlets for an occasion and so this adage. Perhaps the first cooking adventure i had was cutlet and Ennai kathirikkai kuzhambu , which my Chettiar Friend Geetha taught me during my college days . Even now if i am opted to cook any snack for a guest i will go for cutlet only and nothing else. And this time the number was more and first i had cut it in a mould like heart shaped , but later due to the reduced numbers i had to make in the usual circle shape. The filling was made earlier and kept in the fridge . Now to the method.

Ingredients :
Potato – 2 kg
Frozen vegetables -2 cups
Big onion -2
Cumin seeds -2 tsp
Coriander leaves – a handful
Chilli powder – 2tsp
Black pepper powder -1 tsp
Garam masala powder -2 tsp
Salt and oil –as required
White / Whole meal Bread – 2 pkts
Maida – 3 tbls


Wash the potatoes and cut it into four . Cook it in a pressure cooker with little turmeric powder . Adding hing is optional . But this time as it was for a multiracial community i used black pepper powder to cure the digestion problems if any. Meanwhile cut onion into small pieces.

To make Bread crumbs:
Take any bread of your choice , tear them roughly and put it in a mixie. Just whip for 1 minute in the least power . See the bread crumbs are coarse. Spread it in a big plate . Just be sure to grind them in batches only when you need and not in one lot . Remaining can be frozen .

For the Batter :
Mix maida, little salt and water in a thick batter consistency .
When the potatoes are done , peel the skin and mash them gently. In a kadai add oil. Add the onions,cumin seeds , freshly cut coriander leaves Black pepper powder and sauté them well . Add the potatoes, frozen vegetables , chilli powder, garam masala powder, salt and mix well . We need not cook for a longer time as we are going to fry it again. Fresh grated carrot and coriander leaves can be added . Switch off the flame and when cool make them into small balls or in a cookie cutter cut into desired shape . Heat oil enough for deep frying in a kadai . Dip the balls one by one in the batter , coat them well and then dust them with bread crumbs and then flatten it . Deep fry them in oil may be four in a batch . Cook in slow flame and when golden brown take off from the oil . Drain it in a tissue paper and serve with Tomato sauce or chilli sauce .

NB: If you are bored to do the big process simply add the filling to the maida dough . See they both blend together and then make small balls out it and dust then or roll them in bread crumbs and flatten it . Easy method.
