It is year end time. Time to pack and go to India for a holiday. Children too have started enjoying their year end and schools too are giving them leisure time. My son’s class party is fixed and he wanted me to bake cupcakes for his friends. i am not a professional baker and so i was little worried about the outcome as if it is for our house consumption it is okay otherwise it i am not sure about the result. Luckily i got a good recipe in the internet, aptly to say Perfect recipe following it step by step we are assured to get the exact cupcake. So i hurried to the Supermarket to get the ingredients and seeing my son’s face bloom in happiness i forgot the tension and pain in doing the work. Baking is easy at the same time a little bit of alertness is necessary. And here the packing of the cakes and sending them to school is also a big matter.. Luckily i finished baking 36 cakes and a few ones which we consumed. Waiting for one more turn to bake and then all set to go to School.

Ingredients: (For 30 )
All Purpose Flour – 3 cups
Sugar – 2 cups
Cocoa Powder – 1/2 cup
Baking Soda – 2 Tsp
Salt – 1 tsp
Hot water – 2 cups
Vegetable oil – 3/4 cup
Distilled vinegar – 2 tbls (i used lemon juice )
Instant Coffee powder – 1 tbls
Vanilla Essence – 1 tbls
1. Preheat oven to 350 degrees. line the cupcake moulds with paper liners.
2. Mix all APF, Sugar , Cocoa, baking soda, salt , instant coffee powder together.
3. Mix Vegetable oil, lemon juice together and add it to the dry items , blend well. Slowly add hot water and mix well till you get a uniform mixture.
