Azhagar koil is one more abode of Lord Vishnu and along with many sacred facts the dosai made here is also famous which is offered as prasadam. i have never been there nor tasted this. But once i made balck urad dal dosai which is similar to this. Seeing fellow blogger http://www.kitchenrhasody.com blog i wanted to try this as liked the way she had presented it. Now for the recipe.
Boiled Rice -1 cup
Black Urad dal -1 /3 cup
Black Pepper and cumin- slightly crushed -2 tsp
Dry ginger powder -1 tsp
Ghee -1 tsp.
1. Soak rice and dal for 3 to 4 hours.
2. Now grind the dal and rice , skin should not be removed from the dal and rice ground slightly to a coarse texture. The batter must be coarse and thick. Add salt and leave it for 3 to 4 hours at room temperature. Need not ferment it .
3. Now add pepper cumin powder and dry ginger powder , mix well .
4.We can either make it like regular dosa or use an appa pan . Before making it add liberal dosage of ghee in the batter and pour in small rounds in the appa pan and add oil on both sides. We can cover and cook too.
5. Cook on both sides . We get a crispy outer and rice like texture in the inside Dosa. Relishing one for eyes and taste palates too.
Black Urad dal has Vitamin B which is essential for growth of hair and nails. For vegetarians it is a gift from nature. Antidepressant Black Urad dal is good for liver too.
