One thing we come across while blogging is what all we forgot to book mark or copy out of laziness is quickly available and all of us want to do this blogging not only as passion but also as memory chip. The various efforts of many now serve as a huge data base . i want to mention this as i had been long looking for Polenta as i had seen a recipe in a Tamil monthly magazine. but later while cleaning up i had discarded it. Thinking that i have this book in hand i bought Polenta at Mustafa yesterday but was disappointed to see the book missing. Now with surfing i got the recipe and thanks to http://www.geethaskitchen.com for the recipe .
Polenta is basically cream of corn just like
rava is cream of wheat . Adding vegetables to it makes a healthy low carb. diet and is gluten free. One more interesting story about Polenta grain.
Now for the recipe
Polenta -1 cup
Water – 3cups
Carrot, Beans, Greeen capsicum – 2 cus
Ginger – 1 tsp
Mustard seeds -1/2 tsp
Channa dal -1/2 tsp
Oil – 2tsp
Heat oil in a kadai. Add the mustard seed, Channa dal. Fry the onion and green chilli and then add the vegetables. Saute vegetables. Add cut ginger . Then add water and cover it.When the vegetables are cooked add salt and sprinkle Polenta. Mix well and again cover. Simmer the stove . In about 10 minutes it will be ready , to get a dry version cook in open pan for 5 more minutes and mix well. Adding cilantro is an option. Serve with any chutney or sambhar . Rava Upuma dumps the stomach but this one is very light and energetic.
