Oothappam is a variety of dosai and dosai is Indian pancake where fermented flour is used to make this . Now coming to Oothappam it is the best choice when we have the non fermented Idly batter or very sour idly batter at home. We add cut onion to the thickly made dosai and relish it as Oothappam. My sister used to tell about a hotel where nothing is added but the oothappam tastes so good. Although Oothappam is not my favorite i like the onion added to it , but never have tried in any hotel. i came across this recipe in my favourite blog Kitchen Rhapsody. As i had Corn in my hand and i wanted to finish it i checked this site where one can find all recipes for millet and i prepared Oothappam. Fantastic taste, very light and fluffy. Surely different form our regular oothappam and a healthier choice . So if you come across corn please buy and prepare Paniyaarams and Oothapams thus giving rest for our rice.

1. Corn- 1 cup
2. Urad Dal -1/2 cup
3. Idly Rice- 1 /4 cup.
For the topping
1. Mustard seeds-1/2 tsp
2. Urad Dal -1 /2 tsp
3.Big onion -2
4.Green chilli -2
1.Soak Together all the ingredients together for 2 to 4 hours and grind then together.
2.Add salt and allow it to ferment for 5 hours.
3.After the required time is over , we can prepare oothappam .
4.The first two may be soft, if you want it to be crispy after the Tava becomes more hot we will get crispy ones. It is good to cover and cook .
5.In kadai add oil and heat it .Then add mustard seeds, Urad dal , and when brown add the cut big onion and green chilli and saute well . Add this as topping and also include this in the batter . We can use our creativity and make any topping.
6.For the topping on the oothappam we can either mix to the batter or make the oothappam, just take 1 n 1/2 ladle of the Batter and spread on the hot tava. Add a tsp of oil along the sides . Sprinkle the onion mixture on them , Cover and cook in medium fire,. Then flip over and again cook. This time no need to cover.
