Varuthu araitha Sambhar/வறுத்து அரைத்த சாம்பார் .

This recipe is form authentic Rak’s kitchen and she mentioned in it if a sambhar without dal could be cooked was asked to her and yes is the answer. i suppose this must be a traditional dish form the Brahmin community. After making this and tasting it i felt that we are unnecessarily adding dal to our Araithu vitta sambhar as usually it thickens after we add the ground mixture itself.Now for the recipe.

Ingredients:

To roast and grind

Channa Dal -1 tsp

Urad Dal -1/2 tsp

Fenu greek seeds -1 /2 tsp

Raw rice -1 tsp

Red Chilli – 3 to 4

Coriander seeds -1 tsp

Hing – a small piece

Coconut – 2 tsp

For the Sambhar :

Yellow or white Pumpkin, Potato, Carrot  -1 cup

Tamarind – 1 small size

Turmeric powder -1 /2 tsp

Salt

To Temper :

Mustard Seeds -1 /2 tsp

Curry leaves – a few sprig

Method:

1. Roast the ingredients except coconut  in little oil .When cool grind it into a mixture along with coconut .

2. In a pan add the vegetables and add turmeric powder and water . Boil well. When the vegetables are cooked add the tamarind water .

3.After  the raw smell goes away add the ground mixture and salt and give a boil.

4. When done temper with mustard seeds and curry leaves.
