Bajji and Bonda .

Aaachina aachi thaan methu methuva  bajjina aaachina aachi thaan … this jingles was ringing again and again in our house yesterday . We were preparing for a show and tell competition for my son . There are five such projects for him and this is the third with the Theme Jingles. The first one was a sales man and my son acted  as Prata maker , the second a speech about a famous person who lived  for Tamil. This theme jingles  attracted  us very much. At first i was wondering on what to do. Youtube search gave me this ad , Aachi Bajji Bonda mix song. As we do not subscribe to any satellite channels we do not know what is at present a famous ad.. Luckily with Youtube it is easy . i just changed to a different  name and prepared my son with a voice recording of mine. The next challenge was the props. My son wanted Bajji for his class and he also instructed me to buy two packets of Bajji Bonda mix one to make Bajjis and one to show to the class during the ad. But unfortunately we couldn’t get Aachi mix so we bought another brand. But for the class i made the usual home made version . Got up around 5 in the morning and  dived into the process of Bajji making .Made Plantain, Potato, Apple, Onion and Appalam. Also made few Bondas .

Now Bajji is a fritter made with Gram Flour and rice flour with vegetables of our choice .i have already posted few varieties in bajji . This recipe will coorodinate with them. i would also recommend Aachi Bajji Bonda mix for that Fast food taste . It is equally delicious as home made ones.

Ingredients:

1. Besan / Chick Pea Flour- 1 cup

2. Rice flour -1 /2 cup

3. Maida(APF)/ Self raIsing flour -2 tsp

4. Red Chilli powder -2 tsp

5. Hing -1 /2 tsp

6. Turmeric powder -1 /2 tsp

7. Omam/carom seed/ Ajwain – 1/2 tsp

8. Salt -To taste

9. Vegetables – Onion , Potato, Apple, Raw Banana, Appalam.(Cut into desired shapes).

10.Oil – to deep fry

Method:

  1. Sieve the flours and mix all the dry ingredients together.
  2.  Add water little by little .
  3.  The batter should be thick .
  4.  Add oil in a pan and heat it.
  5. The oil should become smoking hot.
  6. Then simmer the flame and dip the vegetables one by one in the Batter  and deep fry .
  7. Turn on the other side the vegetables .
  8.  Usually it will take lesser time to get fried .Drain them in an oil absorbent paper.
  9. Apple Bajji  is a mild oil consumer but very delicious.
  10. Assorted Bajji is ready . Do try making each vegetable separately so that we can select and eat . Serve with chutney or sauce.

For Bonda:

1. Besan /Chick pea flour -1 /2 cup

2. Rice Flour – 2 tbsp

3. Rava – 1 tbsp

4. Onion – 1

5. Green chilli -2

6. Ginger -1 /2 inch

7. Salt – to taste

Mix all ingredients with water. The batter should be thick . Make balls out of it and deep fry. But today i just made as in the Bajji recipe a bit thicker and deep fried .

Tips:

1.Cauliflower, Idli, Brinjal. Paneer, Tofu , Bread,Chilli  too can be used in bajji making .

2.Cooking soda can be added  to get that crispiness if using Maida . Use a pinch only . Since i used Self raising flour i dd not add it.
