Vatha Kuzhambu Podi and Vatha Kuzhambu Recipe . (Iyengar Style)


Vatha Kuzhambu is always liked by all. And there are different versions available. What we eat in the Hotel is spicy and has coconut , what we eat in marriages is different and if the cook is  a Brahmin it has their touch. What we make at homes differs ,our Amma’s more and Grandmother’s the most .My Grand mother makes the very best Vatha Kuzahmbu in the world . Not to brag .But it is .


The main problem in Vatha Kuzhambu is the concentration of it. It should be thick and blended. But in the morning Hurry we cannot get that consistency. Now comes into rescue Vatha Kuzhambu Powder specially intended for this . We do not make this at homes. We use Sambhar Powder  for making Vatha Kuzhambu .Our family heritage boasts of simple recipes . If someone asks me how do i cook this or that  the ways i explain to them  make them frown. Such simple recipes . Tomatoes, Onion, Coconut and spices all are at a minimum level in our family cooking style.Almost in 1 hour a Sambhar and Curry can be done  by me at  early morning 5:45 .

Almost like Brahmins style cooking except for the fact  we combine a little onion in our cooking . Saunf and spices are avoided .And the next generaton like us are fond of crossing borders and we tend to indulge in Briyani and Paneer , saunf and Cinnamon , Thirunelveli to french . Only thing is all vegetarian indulgences only . When i go to my mother in law’s house they do not have saunf  or spices or like that.If it is a Masal Vadai too will lack that saunf. They say they are are not used to it .

Ok now coming to the Vatha Kuzhambu powder i always wanted to have this at home and the time came only recently.

Iyengar style Vatha  Kuzhmabu powder was found in this site .

i made this and yummy Kuzhambu too was the  end result . The main problem of getting the concentration is also solved there.

Ingredients for Vatha Kuzhambu Powder :

1.Coriander seeds – 3 cup

2. Bengal Gram – 1 cup

3. Turmeric -4

4.Red Chilly -3 cup.

Dry the above ingredients in hot sun or just heat them .

One idea is heat them in a micro oven .

Then dry grind in a mixie .

Store in air tight containers.

If you have mill nearby grind there.

If grinding in a mixie use turmeric powder  instead of Turmeric sticks.

Preparation of Vatha Kuzhambu 

1.Tamarind  – size of lemon
2.Mustard – 1 teaspoon
3. Bengal gram – 1 tablespoon
4. Urad Dal – 1 tablespoon
5. Tuvar dhal  – 1 tablespoon
6. Fenugreek  – 1/2 teaspoon
7. Red chilly – 6
8. Vatha 
Kuzhambu podi  – 2 tablespoon
9. Gingely oil  – 6 tablespoon

10 Hing  powder – 1/2 tsp
11.Salt –  Enough to taste 

  1. Prepare 2 cups of Tamarind water .
  2. Heat gingely oil in a pan
  3. Add asafoetida and mustard. Allow mustard to burst
  4. Add Bengal gram, urad dhal, thuvar dhal, chilly,  fenugreek and fry till they turn red. If you are adding vegetables add at this stage.
  5. Add kuzhambu podi in the pan
  6. Add the tamarind water
  7. Boil for 10 minutes
  8. Add curry leaves and turn off the stove.
  9. You can add vegetables like  drumstick, Brinjal and ladies finger to this Kuzhambu or dried vegetables like Black night shad seeds or Sundaikkai. Do fry in oil and then add to the Kuzhambu at the last stage .
