Making a side dish for Idly, Dosai is a difficult one as we end up either making coconut chutney or shed tears cutting Onion. Sāmbhar and kadappa is reserved for some times. But if we are in no mood to cook yet want to serve our familya d elicious side dish and not chutney alone we can make Kosthu. It is a gravy which is watery made with tomato or Brinjal. The best thing in it is it requires no grinding and no multiple steps. Today i amde Tomato Gothsu for Idlis .As iwas searching sites i found an authentic side dish in www.penmai.com
Moong dal – ½ cup
Green chilli – 2
Mustard seeds – 1 tsp
Urad Dal – 1 tsp
Red Chilli powder -1 tsp
Turmeric powder – 1tsp
Idly Maavu – 1 ladle
Hing – 1 tsp
First wash and cook moong dal .
It must not turn mushy so it is better to cook in an open pan than in a cooker.
Then cut onion, Tomato and chilli.
Add oil in a kadai and then splutter mustard and urad dal.
Add hing and fry onion, green chilli . Then sauté Tomato for a short time , it need not be too cooked.
Add the cooked moong dal with remaining water if any . Add chilli powder , Turmeric powder and salt. Cover and cook for few minutes .
Finally add a ladle of Idli maavu and salt. Stir it for a while and allow it to come to a boil. Garnish with curry leaves .
This simple dish is filling too. The same can be made with Brinjal , adding little Tamarind juice for the sour taste.Sending this to
